This hands-on evening begins with a live butchery demonstration from our local supplier and butcher, Alistair Angus from Thurston Butchers, where Alastair breaks down premium meats, sharing technique, insight, and the reasoning behind every cut. It’s a rare look at the skill and precision that defines great steak before it ever meets the fire.
Once the knives are set down, the flames come up. The featured cuts are seasoned, grilled, and cooked over live fire, then served fresh as part of a shared feast. Expect bold flavor, open flames, and an interactive dining experience that brings guests closer to the process—from block to fire to plate.

The night includes:
- a full butchery demonstration with the chance for you to cut your own steaks from the carcass
- the opportunity for you to then have your steaks cooked on our live fire and sample all cuts
